Protein Puffs Cheesy Onion Rings

  • Start by crushing Nacho Cheese Puffs either in a food processor or by placing them in a plastic bag and crushing them using a rolling pin or another suitable tool. Transfer the crushed puffs into a large container to use for breading the onion rings.
  • In a separate bowl, whisk two eggs together until well beaten.
  • Preheat a cast iron pan over medium heat until it reaches a temperature of 325-350 degrees Fahrenheit.
  • Slice the onions into rings that are approximately 3/4 to 1 inch thick, separating the rings from each other.
  • Cut the cheese into strips of similar thickness as the onion rings.
  • Take one onion ring and line the inside with a strip of cheese. Place a smaller onion ring on top, sandwiching the cheese in between the two onion rings. Repeat this process for the remaining onion rings and cheese.
  • Arrange the assembled onion rings on a sheet pan and place them in the freezer for about 15-20 minutes, or until they are frozen together.
  • Dip each onion ring into the beaten eggs, ensuring it is fully coated. Then, coat the onion ring with the crushed nacho puffs, pressing gently to adhere the crumbs to the onion ring. Repeat this dipping and coating process for each onion ring, doing it twice in total.
  • Carefully place the coated onion rings into the preheated cast iron pan and fry them for approximately 2-5 minutes, or until they turn golden brown.
  • While the onion rings are frying, mix 1/3 cup of sour cream with a few dashes of your favorite hot sauce in a small bowl to create a dip.
  • Once the onion rings are cooked to a desired golden brown, remove them from the pan and let them drain on a paper towel to remove any excess oil.
  • Serve the crispy and cheesy onion rings with the sour cream and hot sauce dip on the side.
